Pumpkin Pie

Thanksgiving Desert means Pumpkin Pie or Pecan Pie, RIGHT? What about the side dishes? Do you have them figured out yet? If not, try this! Roasted acorn squash! This blackish green winter squash is timely in season from October to December and can be found your local farmer’s market or in your grocery store. Super easy to make and it comes in it’s own dish —its own skin! Meaning less dishes to wash after the feast... Simply cut the squash in half and scoop out the seeds and coat the insides with butter, salt, and pepper. Then, fill the cavities with brown sugar and butter that will turn into a yummy glaze when baked in the oven at 400 degrees until soft and tender (about 45 minutes to one hour).
