It’s Cinco de Mayo everyone! Time to celebrate with Black Bean Quesadillas. Sound good?
• Package of Whole Wheat Tortillas • 1 Avocado • Can of Black Beans • ½ cup Shredded Mexican Cheese (prefer pepper jack) • Salsa (fresh or jarred) • 2 teaspoons of canola oil
Combine cheese, black beans, and one-fourth of the salsa in a bowl. Fill each tortilla with ½ cup of the above filling. Fold tortillas in half and gently press to flatten. On medium heat, heat one teaspoon of canola oil in a non-stick skillet. Then, place quesadillas in skillet and heat until one side is golden brown. Turn and do the same for the other side. Total cooking time per quesadilla is about two to four minutes. Cover cooked quesadillas with foil and continue with the remaining quesadillas using remaining oil. Serve your black bean quesadillas with avocado, remaining salsa, and sour cream if you like. Garnish with a margarita!
