Looking for a healthy (and festive) appetizer to take to a Memorial Day BBQ? Well, one of my favorites is from Food Network’s Giada De Laurentiis. This recipe quite frankly works any time of the year! It is high in protein, full of fiber and heart healthy fat burning fats!
It’s White Bean Dip with Pita Chips. You basically blend a can of white beans with olive oil, lemon, and garlic. You can serve this with pita chips.
But for a red-white-and-blue version, serve it with blue and red tortilla chips, making it a White Bean Dip with Red and Blue Tortilla Chips. Dare I say you’ll be the hit of your Memorial Day party?
As I know we are all pressed for time, I have taken her recipe, removed a few time consuming tasks yet kept in all the flavor….
• (15-ounce) can cannellini beans, drained and rinsed
• 2 cloves garlic
• 2 tablespoons fresh lemon juice
• 1/3 cup olive oil, plus
• 1/4 cup (loosely packed) fresh Italian parsley leaves
• Freshly ground black pepper
• Pita Bread
• Red white and blue tortilla chips
• 1 teaspoon dried oregano
Place all the ingredients except salt and pepper and dried oregano in food processor or blender. Hit the pulse button till ingredients are chunky. Move to serving bowl. Season with salt and pepper. Top with dried oregano.
Place Stacy’s Pita Chips (my favorite) or red white and blue tortilla chips alongside serving bowl.
